Puttanesca Pasta Sauce

INGREDIENTS:

1/4 c. olive oil
2 tbsp. butter
1/2 c. onion, finely chopped (may use garlic)
2 1/2 c. peeled, chopped tomatoes
2 oz. anchovies, chopped extremely fine
1/2 tsp. red pepper flakes
1 tbsp. capers
1 c. black olives, sliced
Option: Prosciutto or sausage may be added

DIRECTIONS:

Heat oil in skillet with butter. Add onion (and garlic if used). Add tomatoes and simmer 10 minutes. Add anchovies, red pepper and cook for a few minutes. Add capers and olives (prosciutto or sausage if used). Prepare pasta (linguine preferred). Drain pasta and add sauce. Toss well and sprinkle with fresh chopped parsley.
