INGREDIENTS:-
1 1/2 c. hot chicken bouillon
1/2 c. regular rice, uncooked
1/4 tsp. Italian seasoning
1/4 tsp. garlic powder
1 (10 oz.) frozen chopped broccoli, thawed & drained
1 1/2 c. Durkee French fried onions
1 tsp. grated Parmesan cheese
1 lb. fish fillets, unbreaded
1/2 c. Cheddar cheese, shredded
DIRECTIONS:-
In cake pan, combine bouillon, rice and seasonings. Bake covered at 375 degrees for 10 minutes. Top with broccoli, 1 cup French fried onions and Parmesan cheese. Place fish fillets diagonally; sprinkle fish lightly with paprika. Bake, covered, for 20 to 25 minutes or until fish flakes with fork. Stir rice; top with Cheddar cheese and remaining onions and bake uncovered 3 minutes or until onions are golden. Makes 3 to 4 servings.
