INGREDIENTS:
2 1/2 to 3 lb. broiler, fryer chicken, cut up
2 tbsp. olive oil
2 (14 1/2 oz.) cans stewed tomatoes (Italian style)
1 (6 oz.) can tomato paste
2 c. sliced mushrooms
1 c. sliced zucchini
1 tsp. basil, crushed
Hot cooked pasta
DIRECTIONS:
Brown chicken in oil 10 minutes, turning occasionally. Drain. Add tomatoes, tomato paste, mushrooms, zucchini, and basil. Salt and pepper to taste. Cover and simmer 25 minutes. Serve over pasta. Garnish with parsley. 4 to 6 servings.
