INGREDIENTS:
1 lb. pasta
1 lb. boneless chicken
1 lb. chopped spinach (broccoli or asparagus can be used)
4 cloves garlic, or to taste
Parsley, basil and oregano to taste
1/3 c. olive oil - extra virgin preferred
Parmesan or Romano cheese to taste
DIRECTIONS:
Boil pasta - adding salt to the water first. Cube chicken. Cook spinach until still crispy. Pour oil into frying pan, add garlic, basil, oregano and parsley - begin sauteing. Add chicken, browning quickly. Add spinach, lower flame and saute for 8-10 minutes.
Drain pasta - pour chicken and spinach in the oil over the pasta and mix well. Grate plenty of cheese on top - mix well. Can be served as a main course - or as a side dish without the chicken.
