INGREDIENTS:
4 ounces bow tie pasta — uncooked
***DRESSING***
1 tablespoon chopped parsley
1/8 teaspoon pepper
1/2 teaspoon finely chopped garlic
2 tablespoons olive oil
1 tablespoon lemon juice
***SALAD***
1/2 cup coarsely chopped red onion
1 medium ripe tomato — coarsely chopped
1/2 medium cucumber — sliced & quartered
1/2 cup crumbled Feta cheese
12 Greek ripe olives — pitted & halved
6 pepperoncini — sliced crosswise
DIRECTIONS:
Cook pasta according to package directions. Rinse with cold water; drain. Meanwhile in small bowl stir together all dressing ingredients. In large bowl combine pasta, all salad ingredients and dressing; mixing until well coated. Cover; refrigerate at least 2 hours.
