Pasta With Fresh Tomato Sauce

INGREDIENTS:

4 tbsp. olive oil
2 tbsp. minced garlic
3 lbs. tomatoes, chopped
1 lb. linguini
3 tbsp. red wine vinegar
Salt & pepper to taste
1 tbsp. extra virgin olive oil
Grated Parmesan cheese

DIRECTIONS:

Mix 4 tablespoons oil, garlic, tomatoes, vinegar and salt and pepper. Let stand at room temperature about 6 hours.

At serving time, cook linguini as directed. Drain. Mix with fresh tomato mixture. Add 1 tablespoon olive oil. Sprinkle with Parmesan cheese. Serves 4.

Ed’s Sweet Red Pepper Sauce For Pasta

INGREDIENTS:

4 very red, unblemished sweet red peppers, about 1 lb. or slightly more
1 or 2 onions, about 1 lb., peeled
1/4 c. olive oil
1 tbsp. finely chopped garlic
1/2 tsp. dried, hot red pepper flakes
2 c. fresh or canned chicken broth
Salt to taste, if desired
Freshly ground pepper to taste
1/4 c. finely chopped fresh basil

DIRECTIONS:

1. Cut the peppers in half. Cut away and discard the core, veins and seeds. Coarsely chop the peppers. There should be about four cups.

2. Coarsely chop the onion. There should be about four cups.

3. Heat the oil in a fairly large, deep skillet or casserole and add the peppers. Cook, stirring, about five minutes. Add the onions, garlic and red pepper flakes and cook, stirring often, about two minutes. Add the broth, salt and pepper. Cover and cook 15 minutes.

4. Pour the mixture into the container of a food processor or electric blender and blend thoroughly.

Pasta With Bacon In Tomato Cream Sauce

INGREDIENTS:

4 slices bacon
2 scallions, sliced thin
2 tbsp. unsalted butter, cut into bits
1 c. heavy cream
1/2 c. freshly grated Parmesan
1/2 c. peeled, seed and chopped tomato
1/4 tsp. white pepper
1/8 tsp. nutmeg
1/4 tsp. salt
1/4 lb. cheese filled tortellini, cooked

DIRECTIONS:

In a skillet, cook the bacon until crisp. Drain on paper towels and pour off all but 1 tablespoon of the fat in skillet. Cook scallions in skillet for 1 minute. Drain scallions on paper towel. In large saucepan, cook the butter and cream over moderate heat for 3 minutes, stirring occasionally. Stir in Parmesan and bacon, crumbled. Add scallions, tomato, pepper, nutmeg and the salt. Simmer for 1 minute. Add tortellini and stir. Serves 2.
