Pasta With Fresh Tomato Sauce

INGREDIENTS:

4 tbsp. olive oil
2 tbsp. minced garlic
3 lbs. tomatoes, chopped
1 lb. linguini
3 tbsp. red wine vinegar
Salt & pepper to taste
1 tbsp. extra virgin olive oil
Grated Parmesan cheese

DIRECTIONS:

Mix 4 tablespoons oil, garlic, tomatoes, vinegar and salt and pepper. Let stand at room temperature about 6 hours.
At serving time, cook linguini as directed. Drain. Mix with fresh tomato mixture. Add 1 tablespoon olive oil. Sprinkle with Parmesan cheese. Serves 4.

Marinara Sauce For Pasta

INGREDIENTS:

1/4 c. olive oil
2-3 cloves garlic, sliced
1/2 tsp. salt
1/4 tsp. fresh ground pepper
1/4 tsp. oregano
28 oz. can Italian tomatoes (juice and all)
Sliced black olives or green olives
Sliced mushrooms

DIRECTIONS:

Brown garlic in olive oil. Crush tomatoes and add to oil. Add juice and all other ingredients. Pasta E Fagioli

INGREDIENTS:

1 onion, chopped
1 carrot, chopped
1 zucchini, chopped
2 ounces button mushrooms, cleaned and sliced
1 (14 1/2 ounce) can no-salt-added diced tomatoes
1 (14 1/2 ounce) can cannellini beans, rinsed well
3 cups canned fat free low-sodium beef broth or vegetable broth
fresh ground pepper
6 ounces penne pasta or other pastas
2 tablespoons grated parmesan cheese

DIRECTIONS:

Spray a nonstick pot with cooking spray.
Add the onion, carrot, zucchini, and mushrooms; saute for 5 minutes.
Add the tomatoes and simmer, covered, for 20 minutes.
Add the beans, and simmer, uncovered for 5 minutes.
Add the broth and cook, uncovered, for 10 minutes.
Remove from heat and keep warm.
Prepare the pasta according to package directions; drain.
