Bacon And Wild Mushroom Pasta Recipe

INGREDIENTS:

4 ounces porcini mushrooms
3/4 cup hot chicken broth
5 Strips bacon
1 Small red pepper — diced
2 cloves garlic
1/4 cup brandy
1/2 teaspoon thyme
1/2 cup whipping cream
6 ounces Penne Pasta

DIRECTIONS:

Soak mushrooms in 1/4 cup hot broth until soft. Drain. Cut mushrooms into bite size pieces. Cook bacon discard all but 3 teaspoons fat. Remove bacon and crumble set aside. In frying pan add pepper, garlic and mushrooms. Saute 5 minutes. Remove from pan. Add brandy and scrape pan, reduce to glaze. Return the pepper mixture to pan. Add remaining one half cup broth and thyme. Simmer 10 minutes or until reduced by 1/2. Add cream and simmer over very low heat until warm. Toss with pasta and bacon.

Chicken Pepper Pasta Recipe

INGREDIENTS:

4 skinned boneless chicken breast halves
salt and pepper
flour
2 cloves garlic — finely chopped
3 tablespoons olive oil
16 ounces pasta sauce
1 green bell pepper — cut into strips
1 red bell pepper — cut into strips
2 slices provolone cheese — cut in half
1/2 pound farfalle pasta — cooked and drained
Chopped fresh Italian parsley

DIRECTIONS:

Season chicken lightly with salt and pepper; coat with flour. In large skillet, over medium-high heat, brown chicken and garlic in 2 tablespoons oil; remove chicken from skillet. Add pasta sauce, then top with chicken. Bring to a boil; reduce heat. Simmer, covered, 20 minutes, adding peppers during last 5 minutes. Uncover; top each chicken breast half with half provolone cheese slice. Toss hot cooked farfalle with remaining 1 tablespoon parsley; serve with chicken and sauce.

Blackened Chicken And Shrimp Pasta Salad Recipe

INGREDIENTS:

3/4 pound Boneless skinless chicken breast
1/2 pound Medium shrimp
3 cups Rotini pasta
1 Avocado — peeled and diced
1/2 cup Green onion — chopped
1 teaspoon Cilantro — finely chopped
3/4 cup Ranch dressing
Salt and pepper
Blackening seasoning

DIRECTIONS:

Coat chicken breast with olive oil and blackening seasoning. Blacken in hot skillet or charbroil on grill. Cook, peel and devein the shrimp. Cook pasta as directed on package. Place cooked ingrdients in refrigerator to cool. When chilled toss together with green onion, avocado, cilantro, ranch dressing. Season to taste.
