Baked Pasta

INGREDIENTS:

1 large jar chunky or thick spaghetti sauce
1 1/2 cups water
1 bag pasta (shells, bow ties, etc.)
2 cups shredded mozzarella cheese
Parmesan cheese

DIRECTIONS:

Lightly coat large baking dish with vegetable shortening. Heat oven to 425 degrees F.

In a mixing bowl, stir sauce, water and pasta until well coated. Pour pasta and sauce into baking dish Cover with aluminum foil and bake for 30 minutes.

Top with mozzarella cheese, and return to oven for 10 minutes.

Sprinkle Parmesan over the top and serve.

Three-Cheese Baked Ham And Tortellini

INGREDIENTS:

2 tablespoons butter
2 tablespoons minced onion
2 cloves garlic, peeled and minced
2 tablespoons all-purpose flour
1 1/2 cups milk
1/4 cup shredded mozzarella cheese
1/4 cup freshly grated Parmesan cheese
1/4 cup shredded Swiss cheese
1 cup finely chopped ham
1/4 teaspoon ground white pepper
1/4 cup chopped fresh flat-leaf parsley

DIRECTIONS:

Prepare tortellini according to package directions; drain.
Preheat broiler.
Melt butter in a small, heavy-bottomed saucepan over medium heat. Add onion and garlic and sauté until tender. Stir in flour; cook for 1 minute, stirring constantly. Gradually whisk in milk. Bring to a boil, reduce heat and simmer for 10 mintues, or until thickened. Add mozzarella, Parmesan and Swiss cheeses and stir until melted. Fold in ham and white pepper.
Divide pasta between individual ramekins. Spoon sauce over pasta and place 4 to 5 inches from heat. Broil 3 to 5 minutes or until topping is golden. Garnish with parsley and serve.

Beefy Macaroni And Cheese

INGREDIENTS:

1 pound ground beef
1 onion, chopped
2 cans (15 oz. each) tomato sauce
1 cup water
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 cup pitted ripe olives, sliced
2 cups elbow macaroni
2 cups cubed process cheese (e.g. Velveeta)

DIRECTIONS:

In a large skillet, brown beef. Add onion and saute until tender. Drain fat. Add tomato sauce, water, oregano, salt, and olives. Simmer 10 minutes.

Cook pasta and drain.

In a 2 1/2 quart casserole dish, layer half of the macaroni. Top with half of the meat sauce, and half of the cheese. Repeat layers. Bake at 375 degrees F. for 20 to 30 minutes. Makes 6 servings.
