INGREDIENTS:
1 lb. sweet Italian sausages
1/4 cup water
1 onion, chopped
2 cloves garlic, minced
2 green bell peppers, chopped
16 oz. can tomato puree
6 oz. can tomato paste
1/2 tsp. dried basil leaves
1/2 tsp. dried thyme leaves
8 oz. fettuccine pasta
1 cup grated Parmesan cheese
DIRECTIONS:
In a large skillet, place sausages and water and bring to a boil. Cover and simmer for 5 minutes. Drain sausages and continue cooking over medium heat until sausages begin to brown.
Remove sausages from skillet and slice into 1-1/2″ pieces.
Return to skillet along with onion and green peppers. Cook and stir until vegetables are crisp-tender, about 5 minutes. Stir in tomato puree, tomato paste, and dried basil. Simmer 15-20 minutes until sausages are thoroughly cooked.
Meanwhile, cook fettuccine according to package directions and drain well. Serve sauce over fettuccine; top with Parmesan cheese. 6 servings
