Pasta With White Beans, Sausage & Zucchini


8 ounces wagon-wheel pasta
8 ounces turkey kielbasa sausage, cut into 1/4-inch slices
1 medium zucchini (about 9 ounces), cut into 1/4-inch slices
1 (14 1/2-ounce) can diced tomatoes
1 (15 1/2-ounce) can white beans, drained and rinsed
1/2 cup grated Parmesan cheese
Salt, pepper and red pepper flakes to taste


Cook the pasta in plenty of lightly salted water until al dente. Drain
and set aside. Meanwhile, coat a nonstick skillet with cooking spray and heat
medium high. Add the sausage and zucchini and cook 3 to 4 minutes, or until
zucchini begins to soften. Add the tomatoes and beans and cook another 10
minutes, or until zucchini is crisp-tender.
Toss the bean mixture with the pasta and stir in the grated Parmesan.
Season to taste with salt, pepper and red
pepper flakes.
Makes 4 servings.
